Zesty Chicken Fajita Peppers (Simple & Easy)
Ingredients
- 1 lb boneless, skinless chicken breast (cut into thin strips)
- 4 large bell peppers (any color, halved lengthwise and seeded)
- 1 tbsp olive oil
- 1 packet (1 oz) fajita seasoning mix
- Juice of 1/2 lime
- 1/4 cup water (optional, for sautéing)
Directions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- In a bowl, toss the chicken strips with olive oil, fajita seasoning, and lime juice until coated.
- Heat a large skillet over medium-high heat. Add the seasoned chicken and sauté for 5-7 minutes until cooked through. Add a splash of water if the mixture becomes too dry.
- Place the bell pepper halves cut-side up in the prepared baking dish.
- Spoon the cooked chicken mixture evenly into each pepper half.
- Bake for 15-20 minutes, or until the peppers are tender-crisp.
