Zesty Chicken Fajita Peppers (Simple & Easy)

Ingredients

  • 1 lb boneless, skinless chicken breast (cut into thin strips)
  • 4 large bell peppers (any color, halved lengthwise and seeded)
  • 1 tbsp olive oil
  • 1 packet (1 oz) fajita seasoning mix
  • Juice of 1/2 lime
  • 1/4 cup water (optional, for sautéing)

Directions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. In a bowl, toss the chicken strips with olive oil, fajita seasoning, and lime juice until coated.
  3. Heat a large skillet over medium-high heat. Add the seasoned chicken and sauté for 5-7 minutes until cooked through. Add a splash of water if the mixture becomes too dry.
  4. Place the bell pepper halves cut-side up in the prepared baking dish.
  5. Spoon the cooked chicken mixture evenly into each pepper half.
  6. Bake for 15-20 minutes, or until the peppers are tender-crisp.
