Spicy Sweet Potato Black Bean Wraps

Ingredients:

  • 1 large sweet potato, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1/2 cup salsa
  • 4 large whole wheat tortillas
  • 1/4 cup sour cream or plain Greek yogurt (for topping)
  • 2 tablespoons chopped fresh cilantro (for topping)

Directions:

  1. Preheat oven to 400°F (200°C).
  2. Toss diced sweet potato with olive oil, chili powder, cumin, and cayenne pepper (if using) on a baking sheet.
  3. Roast for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.
  4. In a medium bowl, combine the roasted sweet potatoes, rinsed black beans, and salsa. Mix gently.
  5. Warm tortillas according to package directions (microwave for 15-30 seconds or briefly heat in a dry skillet).
  6. Spoon the sweet potato and black bean mixture evenly down the center of each warmed tortilla.
  7. Fold in the sides of the tortilla, then tightly roll up from the bottom.
  8. Top each wrap with a dollop of sour cream or yogurt and a sprinkle of fresh cilantro before serving.
