Southwest Chicken Rice Bake
Ingredients
- 2 cups cooked white rice
- 2 cups cooked shredded chicken
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup frozen corn
- 1 cup salsa (mild or medium)
- 1/2 cup chicken broth
- 1 tablespoon Southwest or taco seasoning
- 1 1/2 cups shredded Monterey Jack or Cheddar cheese
Directions
- Preheat oven to 375°F. Lightly grease a 9×13 inch baking dish.
- In a large bowl, combine the rice, chicken, black beans, corn, salsa, chicken broth, and seasoning. Mix thoroughly.
- Pour the mixture evenly into the prepared baking dish.
- Top the mixture evenly with the shredded cheese.
- Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the mixture is heated through.
- Let stand for 5 minutes before serving.
