Southwest Chicken Rice Bake

Ingredients

  • 2 cups cooked white rice
  • 2 cups cooked shredded chicken
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup frozen corn
  • 1 cup salsa (mild or medium)
  • 1/2 cup chicken broth
  • 1 tablespoon Southwest or taco seasoning
  • 1 1/2 cups shredded Monterey Jack or Cheddar cheese

Directions

  1. Preheat oven to 375°F. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the rice, chicken, black beans, corn, salsa, chicken broth, and seasoning. Mix thoroughly.
  3. Pour the mixture evenly into the prepared baking dish.
  4. Top the mixture evenly with the shredded cheese.
  5. Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the mixture is heated through.
  6. Let stand for 5 minutes before serving.
