Cinnamon Sugar Swirl Muffins
Ingredients:
- 1 ½ cups all-purpose flour
- ¾ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 large egg
- ¾ cup milk
- ¼ cup vegetable oil
- 1 teaspoon vanilla extract
- ½ cup (1 stick) unsalted butter, melted
- ½ cup packed light brown sugar
- 2 teaspoons ground cinnamon
Directions:
- Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
- In a separate medium bowl, whisk together egg, milk, oil, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
- In a small bowl, whisk together the melted butter, brown sugar, and cinnamon for the swirl mixture.
- Fill muffin cups halfway with batter.
- Spoon about 1 teaspoon of the cinnamon swirl mixture over the batter in each cup. Swirl gently with a toothpick.
- Top with remaining batter, dividing evenly.
- Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack.
