Carrot Cake Recipe
Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup vegetable oil
- 1 1/2 cups granulated sugar
- 4 large eggs
- 2 cups grated carrots
- 1 cup chopped walnuts or pecans (optional)
Directions:
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together oil and sugar. Beat in the eggs one at a time.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Stir in the grated carrots and nuts (if using).
- Pour batter into the prepared pan.
- Bake for 30-35 minutes, or until a wooden pick inserted into the center comes out clean.
- Let cool completely before frosting (optional).
