Chili Lime Shrimp Zoodles
Ingredients
- 1 lb shrimp, peeled and deveined
- 4 zucchini, spiralized into zoodles
- 2 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1 lime, juiced and zested
- 2 cloves garlic, minced
- Salt and pepper, to taste
- 1/4 cup fresh cilantro, chopped (optional)
Directions
- Heat olive oil in a large skillet over medium-high heat.
- Add shrimp, chili powder, cumin, smoked paprika, garlic, salt, and pepper. Cook 2–3 minutes per side until pink and cooked through.
- Remove shrimp and set aside.
- In the same skillet, add zucchini zoodles and cook 1–2 minutes until just tender.
- Return shrimp to the skillet; squeeze lime juice over the mixture and add lime zest. Stir to combine.
- Serve immediately, topped with chopped cilantro if desired.
