Chili Lime Shrimp Zoodles

Ingredients

  1. 1 lb shrimp, peeled and deveined
  2. 4 zucchini, spiralized into zoodles
  3. 2 tbsp olive oil
  4. 1 tbsp chili powder
  5. 1 tsp cumin
  6. 1/2 tsp smoked paprika
  7. 1 lime, juiced and zested
  8. 2 cloves garlic, minced
  9. Salt and pepper, to taste
  10. 1/4 cup fresh cilantro, chopped (optional)

Directions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add shrimp, chili powder, cumin, smoked paprika, garlic, salt, and pepper. Cook 2–3 minutes per side until pink and cooked through.
  3. Remove shrimp and set aside.
  4. In the same skillet, add zucchini zoodles and cook 1–2 minutes until just tender.
  5. Return shrimp to the skillet; squeeze lime juice over the mixture and add lime zest. Stir to combine.
  6. Serve immediately, topped with chopped cilantro if desired.
