Coconut Cream Dream Bars
Ingredients
- 1 cup shredded coconut
- 1/2 cup all‑purpose flour
- 1/4 cup powdered sugar
- 1/4 cup melted butter
- 1 cup heavy cream
- 1/4 cup powdered sugar (for filling)
- 1 teaspoon vanilla extract
- Pinch of salt
Directions
- Preheat the oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
- In a bowl, mix shredded coconut, flour, 1/4 cup powdered sugar, melted butter, and a pinch of salt until crumbly.
- Press the mixture firmly into the prepared pan and bake for 15 minutes or until lightly golden.
- While the base cools, whisk heavy cream, 1/4 cup powdered sugar, vanilla extract, and a pinch of salt until stiff peaks form.
- Spread the whipped cream over the warm base. Refrigerate for at least 2 hours until set.
- Cut into bars and serve chilled.
