Coconut Cream Dream Bars

Ingredients

  • 1 cup shredded coconut
  • 1/2 cup all‑purpose flour
  • 1/4 cup powdered sugar
  • 1/4 cup melted butter
  • 1 cup heavy cream
  • 1/4 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Directions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
  2. In a bowl, mix shredded coconut, flour, 1/4 cup powdered sugar, melted butter, and a pinch of salt until crumbly.
  3. Press the mixture firmly into the prepared pan and bake for 15 minutes or until lightly golden.
  4. While the base cools, whisk heavy cream, 1/4 cup powdered sugar, vanilla extract, and a pinch of salt until stiff peaks form.
  5. Spread the whipped cream over the warm base. Refrigerate for at least 2 hours until set.
  6. Cut into bars and serve chilled.
