Delicious Vanilla Pudding Pumpkin Bread

Ingredients:

  • 1 (15 ounce) can pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 box (3.4 ounce) instant vanilla pudding mix (dry)
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Directions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together pumpkin puree, sugar, oil, and eggs until well combined.
  3. Stir in the dry instant vanilla pudding mix.
  4. In a separate medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Pour batter into the prepared loaf pan.
  7. Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
