Cinnamon Sugar Swirl Muffins

Ingredients:

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 large egg
  • ¾ cup milk
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup (1 stick) unsalted butter, melted
  • ½ cup packed light brown sugar
  • 2 teaspoons ground cinnamon

Directions:

  1. Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk together egg, milk, oil, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
  5. In a small bowl, whisk together the melted butter, brown sugar, and cinnamon for the swirl mixture.
  6. Fill muffin cups halfway with batter.
  7. Spoon about 1 teaspoon of the cinnamon swirl mixture over the batter in each cup. Swirl gently with a toothpick.
  8. Top with remaining batter, dividing evenly.
  9. Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let cool in the pan for a few minutes before transferring to a wire rack.
