Spicy Sweet Potato Black Bean Wraps
Ingredients:
- 1 large sweet potato, peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper (optional, for extra heat)
- 1 (15-ounce) can black beans, rinsed and drained
- 1/2 cup salsa
- 4 large whole wheat tortillas
- 1/4 cup sour cream or plain Greek yogurt (for topping)
- 2 tablespoons chopped fresh cilantro (for topping)
Directions:
- Preheat oven to 400°F (200°C).
- Toss diced sweet potato with olive oil, chili powder, cumin, and cayenne pepper (if using) on a baking sheet.
- Roast for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.
- In a medium bowl, combine the roasted sweet potatoes, rinsed black beans, and salsa. Mix gently.
- Warm tortillas according to package directions (microwave for 15-30 seconds or briefly heat in a dry skillet).
- Spoon the sweet potato and black bean mixture evenly down the center of each warmed tortilla.
- Fold in the sides of the tortilla, then tightly roll up from the bottom.
- Top each wrap with a dollop of sour cream or yogurt and a sprinkle of fresh cilantro before serving.
