Peanut Butter Cookie Dough Brownies

Ingredients

For the Brownie Layer

  • 1 (18 oz) box brownie mix (plus ingredients required on the box: usually oil, water, and eggs)

For the Edible Cookie Dough Layer

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 1 1/2 cups all-purpose flour (heat-treated or microwaved for safety)
  • 1 cup powdered sugar

Directions

  1. Preheat oven to 350°F. Line a 9×13 inch baking pan with parchment paper, leaving an overhang.
  2. Prepare the brownie mix according to package directions. Pour batter evenly into the prepared pan.
  3. In a large bowl, beat the softened butter, peanut butter, brown sugar, and vanilla extract until smooth.
  4. Gradually mix in the milk, flour, and powdered sugar until a thick cookie dough forms.
  5. Drop spoonfuls of the peanut butter cookie dough evenly over the top of the brownie batter.
  6. Bake for 35 to 40 minutes, or until a toothpick inserted into the center of the brownie portion comes out mostly clean.
  7. Cool completely on a wire rack before lifting out of the pan and slicing into squares.
