Mini Caprese Pesto Sliders

Ingredients:

  • 12 mini slider buns
  • 12 fresh mozzarella balls (bocconcini), halved
  • 12 cherry tomatoes, sliced in half
  • 12 basil leaves
  • 12 tbsp pesto sauce
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Optional: balsamic glaze for drizzling

Directions:

  1. Preheat the grill or skillet to medium heat.
  2. Brush the slider buns lightly with olive oil and toast until golden.
  3. Slice the mozzarella halves into thin rounds; season with salt and pepper.
  4. Spread 1 tsp pesto on the bottom half of each bun.
  5. Layer a mozzarella slice, a cherry tomato half, and a basil leaf.
  6. Drizzle a little pesto over the tomato and basil.
  7. Top with the bun’s top half.
  8. Serve immediately, optionally drizzle with balsamic glaze.
